It sells through pilot production B2B to food manufacturers, cutting soaring cocoa costs and providing security.

Using food industry side streams with zero additional agricultural footprint, it achieves low carbon impact production that helps businesses hit sustainability targets and stabilize supply, while providing delicious fermented ingredients high in fibre.

Proven processes combine for cost competitiveness at commercial volumes.  Tested with world leading confectionery brands, koji cocoa can replace cocoa at any percentage in confectionery, bakery and beverages, blendable with existing food processes. Fermtech enables manufacturers to create sustainable, nutritious products from waste, closing loops in a more circular supply chain, and meeting clean-label demands without regulatory delays. 

MycoVibes Biotech

MycoVibes Biotech is a biotechnology startup developing a circular protein platform that transforms food industry side streams into high-value mycoprotein through proprietary shiitake mycelium fermentation. Its scalable technology helps reduce food wastes and support a more climate-resilient food system.

The resulting clean-label ingredient is highly digestible, naturally rich in β-glucans, vitamin B12, and iron, and contains all essential amino acids, providing a sustainable protein solution for next-generation food products.

C-Source Renewables

C-Source Renewables is a UK-based industrial biotechnology startup developing sustainable fermentation feedstocks from upcycled food industry side streams. Using its proprietary process, the company transforms surplus potatoes and bread into high-purity glucose syrups for industrial fermentation. These sustainable feedstocks provide an alternative to conventional first-generation glucose sources, supporting the production of bio-based chemicals, ingredients and other high-value products. C-Source Renewables is also developing rare sugars with prebiotic and low glycaemic properties for food, feed and beverage applications. By bringing food waste back into the value chain, the company helps improve resource efficiency and accelerate the transition to a circular bioeconomy.

Beta Choc

Betta Choc is a UK-based FoodTech startup developing a proprietary solid-state fermentation bioprocess that converts date seeds into a functional cocoa alternative ingredient for global food manufacturers. Its technology enables 30–50% cocoa replacement while preserving taste, texture, and legal chocolate designation, helping manufacturers reduce their reliance on cocoa without compromising product quality.

The company’s platform is designed to address the growing challenges facing the global cocoa supply chain, including price volatility, sustainability, and resource use. By transforming underutilised agricultural by-products into high-value functional ingredients, Betta Choc combines fermentation technology with circular economy principles to support the development of more sustainable chocolate products while significantly reducing CO₂ emissions and water consumption.

Vegalaya

Vegalaya is a food technology startup specialising in functional ingredients and blends derived from ancient grains, particularly millets, for the plant-based dairy sector. Drawing on the nutritional value and functional properties of these indigenous and climate-resilient crops, the company provides solutions that enhance the performance, nutrition, and sensory qualities of dairy alternatives. Its products support food manufacturers in creating sustainable, clean-label dairy-free beverages, yoghurts, cheeses, and other plant-based applications.

IBP Ventures 

ABP Ventures  IBP Ventures is UK-based an early-stage biotechnology startup developing recombinant ice-binding protein technologies to reduce freeze-related damage and improve cryopreservation performance. The company’s focus is on applications where freeze–thaw stress can impact biological recovery, quality, consistency, and cost, including IVF, reproductive medicine, cell therapy, biobanking, and life-science research. IBP Ventures works with industry and research partners to validate innovative preservation solutions through pilot studies, formulation testing, and collaborative development projects.

Algenuity 

Algenuity is a UK-based biotechnology company developing protein ingredients from microalgae. Using a proprietary microbial fermentation platform, it produces white Chlorella, a whole-food, non-allergenic ingredient with a neutral colour and improved sensory properties.

Its ingredients are designed for food and beverage applications, providing a nutrient-dense protein source that can support the reduction or replacement of animal-derived ingredients such as egg and dairy. Algenuity focuses on enabling scalable and sustainable use of microalgae in food systems.
